Winter is here – starting the day with something warm and wholesome will get your engine running and get you going for the wintery day ahead.
INGREDIENTS
200 g quinoa flakes
1 tablespoon chia seeds
1 ½ cups of almond/coconut milk
1 teaspoon vanilla extract or paste
1/2 teaspoon ground cinnamon
2 organic eggs
Grated rind of one orange
½ teaspoon baking soda
2 bananas – smashed
METHOD
- Combine quinoa flakes and milk.
- Soak for at least 1 hour…but best overnight.
- Place into a high speed blender along with vanilla, cinnamon, eggs, orange rind and baking soda. If egg intolerant, use organic egg replacer.
- Blend until smooth and creamy.
- Remove and fold in the smashed banana by hand, but don’t blend.
- Cook in a pan over low-medium heat until golden – using coconut butter
- Serve with seasonal poached fruit, LSA and coconut yoghurt
*Poach fruit using juice from 1 orange and 2 tablespoons honey and seasonal fruit of your choice (3 pieces chopped into bite size portions)
*Boost your protein intake with 1 scoop of our fermented brown rice protein powder and dd 1/4 cup extra milk to the mixture.
